	<Abstract>Quantitative estimation of protease produced by bacterial isolates of bakery industry was performed. Primary screening of protease production was carried out using gelatine agar plates followed by quantitative estimation of protease was conducted for five bacterial isolates named as TKMFT8,TKMFT22,TKMFT25, TKMFT39 and TKMFT53 using MRS broth inoculated with incubated over a 10 days period in a rotary shaker at 37&</Abstract>
